Recipe: Amarillo Smoked Sausage Po’Boys

Here’s a great new recipe, courtesy of the San Juan Hot Shop in Friday Harbor, WA.

Melinda’s Amarillo Smoked Sausage Po’ Boys with Sweet Peppers, Onions and Mango Mayonnaise.

INGREDIENTS:

4 links of smoked sausage (6-10 inches)

1/2 cup Melinda’s Amarillo Mustard Hot Sauce

1 red, 1 yellow and 1 orange bell pepper

1 purple onion

1/4 cup of olive oil

1 loaf French Bread

Mango Mayo:

3 heaping tablespoons of mayo

2 tbsp of Melinda’s Mango Hot Sauce

Just whisk these 2 ingredients and you’ve got a fabulous mango mayo.

DIRECTIONS:

Cut peppers in quarters, take out core and seeds.  Cut onion in thick rings for the grill.

Light grill to high heat.  Using a basting brush, put a light coating of oil on peppers and onions and place on grill.  Put sausage links on grill and baste with Melinda’s Amarillo Mustard hot sauce frequently.  Be sure not to leave peppers on grill too long.  You want them seared and cooked but not too soft.  Remove peppers and slice into strips. Allow onion to cook longer than peppers.  remove onions and also slice into strips.

Lightly sauté grilled onions and peppers with 1 tbsp. butter in sauté pan for 2 minutes over med-high heat.  Warm French bread and cut into 6 to 8 inch sections for Po’ Boy sandwiches.  Put Mango Mayo on bread and layer with sausage and peppers to finish off this masterpiece!

And the winner from the Kluckr Krawl Is…

We’ve told you about Kluckr, the awesome site for hot wing lovers, right?  Well, check this out:  they did a pub crawl for hot wings, called the Kluckr Krawl.  At each stop, folks tasted and rated the wings of NYC.  They also taste tested a bunch of Melinda’s while they were at it.

Interesting findings:  out of 100 folks surveyed, here were the favorite Melinda’s flavors for everyday use:

Honey Hot Mustard Wings

Here is a spicy tropical recipe for wings; the taste is a delicious blend of mustard and honey.

2 pounds chicken wings
Vegetable oil for deep frying
2 tablespoons Melinda’s Amarillo Hot Mustard Pepper Sauce
1/4 cup honey
1/3 cup brown sugar
Lettuce leaves (garnish)
1 carrot, grated (garnish)

Remove the wing tips and discard. Deep fry the chicken wings in the vegetable oil until they are golden brown, then keep the wings warm. Meanwhile, combine the Melinda’s Amarillo Hot Mustard Pepper Sauce, honey, and brown sugar in saucepan large enough to hold all the wings, and heat the mixture until bubbly. Spread the lettuce leaves on a serving plate and sprinkle with grated carrot. Add the wings to the saucepan, and mix until the wings are completely coated with the sauce. Place the wings on top of the lettuce and serve hot as an appetizer.

Yield: 4 servings

Recipe: Melinda’s Mango Salsa

Cinco de Mayo is just around the corner, and we thought you might be stocking up on supplies and looking for recipes.  So, here’s a fiery but refreshing mango salsa made with our delish Mango sauce.  Tell us what you think.

Melinda’s Mango Salsa

ripe mangoes (About 3/4 lbs. each)
2 green onions
1/2 garlic clove
1/4 cup minced cilantro
1/2 cup Melinda’s® Mango Hot Sauce
1 lime

Peel mangoes then cut fresh from pit and mash. In bowl put mashed mango, hot sauce, the onions diced and trimmed, add cilantro, garlic and a squeeze of fresh lime juice. Cover and refrigerate for twov hours. Makes a great garnish for fish and chicken.

Recipe: Melinda’s Bold Buffalo Wings

It’s been so sunny & wonderful, we’re getting out the grill. Check out one of our wing recipes:

1 5oz. bottle of Melinda’s Extra Hot Sauce
5 oz. of Spice Exchange Louisiana Red Hot Sauce
3/4 stick of butter or margarine
Worchesterchire sauce
5 lbs. chicken wings
Garlic Powder
Seasoned Salt or Season All
celery stick
chunky bleu cheese dressing

Season chicken wings with garlic powder, black pepper, and seasoned salt. Bake (20 minutes at 400 F, turn chicken after 10 min.) or fry seasoned wings til crispy brown. Mix two tablespoons of worchesterchire sauce, butter or margarine with Melinda’s Extra Hot and Spice Exchange Louisiana Red hot sauce in a saucepan on low heat. While simmering add garlic to taste. Briefly soak wings in sauce and serve on a platter with celery sticks and bleu cheese dressing for dipping.

YIeld: 6 to 8 servings as an appetizer

We already told you how much we like Ted’s site, and thought it might be fun to show you a little more.  Check out this review he did of our original hot sauce. It’s like his other reviews:  really thorough, unique to his point of view, interesting.  It’s like he takes the time to really dive into what makes a sauce great or not.

We also like that he points out something you might not know:  you can buy Melinda’s by the gallon.  It’s true!  We have plenty of fans who stock up that way and refill little bottles they keep at home and work.  It saves money and ensure you always have your favorite sauces on hand.

Here’s a little more from Ted’s review:

I think it would make an especially good sauce for those who are used to basic Louisiana style sauces and it would add a level of interest beyond what they expect.

I personally have tried it on many foods, including, recently, chicken sausages and Mexican Style Pulled Pork, or Carnitas (my admittedly inauthentic version, gringo that I am), and it was great.
